How do we process Sencha Green Tea in Sri Lanka This Green tea also comes from the same camellia sinensis plant, as almost all the teas do. After the plant grows, we use the youngest leaves to make sencha green tea. Therefore, it gives the best quality. Mainly, the fresh tea leaves go to the steaming process immediately to prevent oxidation. NOTE: If the leaves would fully be oxidized it becomes black tea. Then, we move the tea leaves drying and rolling process. in this process, the tea dries off. As a result, it gets well shape and taste. The shape of the leaves is long and narrow in appearance and light color in the cup. Shincha brews a light yellow to powerful green color.
