The predominant variety is Arbequina in 90%, Picual is a 5%, and the other one 5%, is Hojiblanca, Nocellara del Belice, Biancolilla and Cerasuola. The olive oil is conserved under nitrogen atmosphere during his storage, to fight against the oxygen and temperature controlled.
