Ionic exchange polymers, when in touch with a solution containing salt compounds (i.e. ions), exchange certain ions with other ions having the same electric charge. In particular, potassium ions can be exchanged with hydrogen ions which will create a new tartaric acid molecule. Moreover, other ions, such as calcium, iron and copper, are partially exchanged. This treatment lowers the pH giving added protection against bacterial attacks (for example rettanomyces) which could generate anomalous fermentations.

In a crossflow filtration the filter-surface is a semipermeable membrane. The liquid passes through the membrane and across of it. Thus keeps it clean. Used for wine, fruit fermented, mead, beer. The membranes used by Bared do not create any mechanical resistance: are delicate on the product and do not increase its temperature. Filtration with Bared systems guarantees the brilliant and sterile product in one passage compared to other systems that require more filtration stages with resulting in greater stress on the product.
