All this is due to the fact that the shrubs that are intended for the production of Matcha tea are protected from the sun with special mats before harvesting. This results in an increased production of amino acids that contribute to the deeper and unique flavor of Matcha Tee. Shading causes more chlorophyll to be produced in the leaves, which is converted into catechin over time. The leaves are then harvested, dried and rubbed into a powder.
