The nutritional value of rice, like other cereals, depends on the type of grain and the way it is processed. After removing the shell and polishing the grain, the amount of vitamins, mineral salts, and fiber decreases, but at the same time, the digestibility of carbohydrates and proteins improves. Rice is characterized by a high content of starch (up to 85%), which is easily absorbed, so rice is classified as a dietary product. The Russian scientist M. I. Vavilov identified two centers of origin of barley - the Mediterranean and Western Asian regions. During the excavations of Late Paleolithic sites in Israel, archaeologists found grains of wild wheat and barley. Their age was determined by the radiocarbon method to be 19,400 years. Grains of the oldest cultivated types of wheat and barley were found in Jordan. They are about 11,000 years old
