"Extremely ancient roots Arrowroot or arrowroot (Maranta arundinacea) is a large, perennial plant of the genus Maranta and is found in rainforests. Arrowroot was already being cultivated by humans 11,000 years ago. Arrowroot is also the name of the easily digestible starch from the rhizomes. Arrowroot Powder is an excellent binding agent for creamy sauces and glaze with neutral taste. The Cultivation of Arrowroot The rhizomes are harvested one year after planting. They contain about 23% starch. They are first washed and then stripped of the papery skin. They are then washed again, dried and ground into a pulp. The milky liquid thus obtained is filtered to extract a powder of starch. Arrowroot powder applications Arrowroot powder is used for making sauces. Use half as much arrowroot as (regular) flour on the recipe. The exact amount needed varies depending on the desired thickness of the sauce. Arrowroot is easy to digest."
