Green tea is obtained from the same plant (Camellia sinensis) as black tea. In contrast to black tea, green tea isn't fermented but gently steamed and dried. Most of the health benefits of green tea are attributed to the catechins, a group of polyphenols, which gives the tea a bitter taste.
